The Reception of Henry James in Europe (The Reception of British and Irish Authors in Europe)From Bloomsbury Academic

Henry James, the American-born writer who chose to live in Europe, settled in London and Rye, becoming a British subject in 1915. He occupies a major position as a dedicated artist and cultural historian who combined the strengths of American, English and French nineteenth-century literary traditions with the aesthetic innovations that paved the way for modern and postmodern fiction. The rare subtlety and intensity of his writings can be fully appreciated only through the responses of perceptive readers beyond the English-speaking world. This collection of essays, prepared by an international team of scholars and translators, examines the ways in which James was translated, published and reviewed on the Continent of Europe, notably in France, Italy and Germany, but also in most of the languages of Northern, Southern and Eastern Europe. Some specific contributions are devoted to the strikingly original cinematic and operatic adaptations of Henry James's works.

This volume becomes and important addition to both students and scholars interested in deciphering the international impact of James's work.' Maria Pirgerou, University of Athens, The European Association of American Studies. '...impressive in its scope...this book also brings us up to date as to the critical work done on Henry James throughout Europe.' Professor Hubert Teyssandier, Paris Sorbonne, The Revue Francaise D'etudes Americaines.

Reading the Mahavamsa: The Literary Aims of a Theravada Buddhist History (South Asia Across the Disciplines), by Kristin Scheible

Vamsa is a dynamic genre of Buddhist history filled with otherworldly characters and the exploits of real-life heroes. These narratives collapse the temporal distance between Buddha and the reader, building an emotionally resonant connection with an outsized religious figure and a longed-for past. The fifth-century Pali text Mahavamsa is a particularly effective example, using metaphor and other rhetorical devices to ethically transform readers, to stimulate and then to calm them.

Reading the Mahavamsa advocates a new, literary approach to this text by revealing its embedded reading advice (to experience samvega and pasada) and affective work of metaphors (the Buddha's dharma as light) and salient characters (nagas). Kristin Scheible argues that the Mahavamsa requires a particular kind of reading. In the text's proem, special instructions draw readers to the metaphor of light and the nagas, or salient snake-beings, of the first chapter. Nagas are both model worshippers and unworthy hoarders of Buddha's relics. As nonhuman agents, they challenge political and historicist readings of the text. Scheible sees these slippery characters and the narrative's potent and playful metaphors as techniques for refocusing the reader's attention on the text's emotional aims. Her work explains the Mahavamsa's central motivational role in contemporary Sri Lankan Buddhist and nationalist circles. It also speaks broadly to strategies of reading religious texts and to the internal and external cues that give such works lives beyond the page.

Review

This is a fresh look at the Mahavamsa. Showing how imaginative practices of narratives―shape-shifting nagas, the imagery of light, and the veneration of relics―have shaped Theravada Buddhism in Sri Lanka, Kristin Scheible demonstrates that the Mahavamsa sought to construct and inspire a community of readers by prompting an aesthetic and religious response. Her literary sensibility illuminates this perceptive study.

(Maria Heim, author of The Forerunner of All Things: Buddhaghosa on Mind, Intention, and Agency)

Scheible views the Mahavamsa as a piece of religious literature, in contrast to other scholars who have generally seen it through a historian's lens, or who have read it from a political or ethnic perspective as something intended to bolster notions of kingship and Sinhalese nationalism. Clearly written, solidly grounded in Buddhist scholarship, well attuned to theory in the fields of history, literature, and religion, and just plain insightful, this book is inspiring not only for what it has to say about an important Sri Lankan Buddhist text but more generally for our study of Buddhist literature as a whole.

(John S. Strong, author of Buddhisms: An Introduction)

This groundbreaking book successfully provides a corrective to the study of Buddhism and Sri Lanka by going beyond the received, common interpretations of the great chronicle text, the Mahavamsa.

(Bradley Clough, author of Early Indian and Theravada Buddhism: Soteriological Controversy and Diversity)

About the Author

Kristin Scheible is associate professor of religion and humanities at Reed College.

Good book for beginning drummers
By caseyrebel
I like this book because it has notations for many different grooves (blues, rock, country and pop). Along with the CD that comes with it, it is very easy to follow. Each track is indicated on the book and the CD tells you which pattern will be playing on the next track. It's nice that the CD has play-along songs with and without drums. I recommend this book and another one by Rod Morgenstein called Drum Set Warm-Ups.

The University of Google: Education in the (Post) Information Age, by Tara Brabazon

Looking at schools and universities, it is difficult to pinpoint when education, teaching and learning started to haemorrhage purpose, aspiration and function. Libraries and librarians have been starved of funding. Teachers cram their curriculum with 'skill development' and 'generic competencies' because knowledge, creativity and originality are too expensive to provide to unmotivated students and parents obsessed with league tables, not learning. Meanwhile, the internet offers a glut of information on everything-under-the-sun, a mere mouse-click away. Bored surfers fill their cursors and minds with irrelevancies. We lose the capacity to sift, discard and judge. Information is no longer for social good, but for sale. Tara Brabazon argues that this information fetish has been profoundly damaging to our learning institutions and to the ambitions of our students and educators. In The University of Google she projects a defiant and passionate vision of education as a pathway to renewal, where research is based on searching and students are on a journey through knowledge, rather than consumers in the shopping centre of cheap ideas. Angry, humorous and practical in equal measure, The University of Google is based on real teaching experience and on years of engaged and sometimes exasperated reflection on it. It is far from a luddite critique of the information age. Tara Brabazon celebrates the possibilities of digital platforms in education, but deplores the consequences of placing funding on technology and not teachers. In doing so, she opens a new debate on how to make our educational system both productive and provocative in the (post-) information age.

Review
'A passionate, scholarly, deeply considered and, at the same time, "practical" critique of how universities internationally confuse access to digital information with developing educated and critical citizens. The book will be of value in positively shaping both pedagogic practice and institutional policies.' Alan Jenkins, Oxford Brookes University, UK 'The University of Google is my book of the year for 2007. I have nagged colleagues and friends to read ever since I saw a manuscript copy. It will have a huge impact on everyone in higher education, helping those suspicious of new media to formulate their criticisms and those eager to adopt it better placed to introduce it appropriately.' Frank Webster, City University London, UK 'Angry, experiential and humorous, this book connects with the modern teaching experience in so many ways. Any tutor, teacher or administrator who has ever had to upload a series of lecture notes with the knowledge that many students will merely download the notes and not attend the lecture will engage with this book. The pages offer guidance to bridging the gap between principles and practice. It offers practical steps to blocking students from googling their way through their degrees...This is an engaging book that should grace the shelves of any digitally-aspirant teacher.' M/C Reviews, media-culture.org.au 'It is a thoroughly researched and clearly argued work, written with passion and commitment...As the title suggests, The University of Google tackles the problems and possibilities of the online and digital realm. Brabazon is not a Luddite, and understands that such media and spaces have potential for higher education: the fault is not with the media per se, but how or why it might be used...Perhaps it is for those policy makers further up the academic pecking order that The University of Google would make the most interesting reading, as ultimately it is their decisions that affect those of us at the chalk-face.' Art/Design/Media - The Higher Education Academy '...this is an exhilarating book and I recommend it unreservedly: anyone working in education (and especially Vice Chancellors, Presidents or Rectors) ought to read this book and then go away and ask themselves why they aren't doing better by society and by the students they enroll in their institutions.' Information Research 'This book has some important things to say about what we should be doing to safeguard the quality of education, about what education is, its purpose, and how technology should be our servant not the servant of our masters. I recommend it strongly. ' Ariadne 'Professor Brabazon speaks from her experience in both Australia and the United Kingdon as a media studies lecturer. She draws on a rich reserve of stories from and about her students, as well as reports and commentaries from a broad range of academic and cultural sources...' Studies in Learning, Evaluation, Innovation and Development 'In The University of Google, Tara Brabazon offers practical suggestions for dealing with dilemmas of digital plagiarism, i-lectures, and the e-university...The University of Google aims to provide constructive solutions to educating students from under-represented groups in the age of the internet...she offers practical suggestions for teaching students critical literacy in the age of the internet, including frank and personal details that confront her in daily life...the book is creatively and engagingly written, broad and ambitious in scope...' International Review of Modern Sociology 'The book is highly detailed analysis of the topic and is illustrated with text from a great number of Brabazon's personal emails (mainly from her students). The book can be praised both for this strategy and a report on her own methods of improving digital literacy: she clearly demonstrates her passion and commitment to the issue, thus encouraging other educators to follow suit. The book is recommended to those active in university education, including lecturers and those in administration as well as students and librarians, who may benefit from an academic's analysis of learning styles and outcomes.' Information, Communication & Society 'a very passionate book written by a teacher and researcher who really worries about the developments in educational institutions. The passion is based on a comprehensive insight in matters concerning learning, literacies, communication and policies affecting the universities...It is a very brave book discussing and criticizing the implications of many of the phenomena we find it hard to oppose simply because they permeate our daily lives and the institutions in whcih we work...The book is highly recommended as a both enjoyable and frightening read.' New Library World 'Brabazon states that books about teaching are often dull. This book is not, and written in a very accessible style with reference to a wide range of literature...I would recommend this book to anyone interested in higher education and technology' Higher Education Review

Students in search of a face-to-face teacher
By M. Werner
Tara Brabazon's book "University of Google" (2007) provides a complete discussion of the issues surrounding the push in higher education towards online delivery of course content. Brabazon discusses how university administrators have been economically pressured to increase revenues and reduce the cost of faculty through the use of online courses. She provides numerous literature references arguing that the primary mission of universities, namely a student's education, has and will continue to suffer using this approach. While there is a significant discussion of the advantages of online tools, such as Google, there is also a thoughtful argument presented that states, "Google is facilitating laziness, poor scholarship, and compliant thinking." Brabazon attempts to provide some remedies to this push toward online education, but I wish that she would have explored this more with additional concrete examples of alternatives to the use of the online approach. Most of the examples she does provide come from the Arts and Humanities but can be applied more broadly across the spectrum of disciplines in higher education. Her argument that students miss out on the non-textual cues (i.e. other student responses, smells, tastes, etc.) by viewing an online lecture rather than a face-to-face lecture is compelling. I came away from reading this book inspired to focus on improving my own lecture skills and enhancing interactions with students in the classroom. I agree with Brabazon's assessment that "students are not consumers", and education is most effective when rigorous, challenging, and at times painful. Only when students are challenged to the brink are they truly transformed into well educated, literate, critical human beings.

CHECK FOR ALL PAGES IN YOUR BOOKS.
By Melissa Pichette
This book was listed as NEW when purchased and is missing pages 509-524 and now I can’t return it because I missed the 30 day return. Unfortunately it was not noticed right away because they had not gotten to that part of the book in class until just this week… Can’t study and now have a non-usable damaged book….

Possibly the Perfect Textbook
By Christina41586
This book is beyond useful! I'm acing my class, and I plan on holding onto it for graduate school. There is a lot of information included in each chapter, but it isn't overwhelming. Tests for certain organisms are highlighted in their own sections. Somehow the authors managed to include nothing but helpful facts. No pointless fillers. No digging through a 50 page paragraph for one key topic. The organization is flawless.

If your professor is using a different textbook, you should consider purchasing this boo as a supplemental read.

Secret War in Shanghai: An Untold Story of Espionage, Intrigue, and Treason in World War II, by Bernard Wasserstein

Shanghai during World War II was a killing field of brutal competition, ideological struggle, and murderous political intrigue. China's largest and most cosmopolitan city, the intelligence capital of the Far East, was a magnet for a corrupt and bizarrely colorful group of men and women drawn to the "Paris of the East" for its seductive promise of high living and easy money. Political and sexual loyalties were for sale to the highest bidder. Allied and Axis agents, criminal gangs, and paramilitary units under various flags waged secret, savage warfare. Espionage, lurid vice, subversion, and crime came together in a lethal concoction. Nowhere on earth was the twilight zone between politics and criminality better exemplified than in this glittering and dangerous place. Secret War in Shanghai is the first book-length account of the little-known story of Shanghai in the war years. The widely respected historian Bernard Wasserstein has researched it entirely from original sources and uncovered startling new evidence of collaboration and treason by American, British, and Australian nationals. This remarkable depiction of complicity and betrayal is history at its most exciting and surprising.

Amazon.com Review
Before World War II, Shanghai was China's leading commercial center and the most vital and glamorous of Asia's great cities. Against the background of civil war, Shanghai was administered by a consortium of international powers intent on exploiting a defenseless China. The city's seizure by the Imperial Japanese Army in December 1941 ended much of its glitter but not its role as a den of espionage, corruption, and vice. Bernard Wasserstein deftly sets the complex scene as the different powerbrokers, from ambassadors to gangsters, accommodated to the occupying Japanese. The cast of characters is bizarre, ranging from master spies such as Richard Sorge, whose coup was to warn Stalin of Germany's impending invasion, to imposters and petty secret agents living on their wits. People were not what they seemed: the author reveals the often sordid realities behind his protagonists' masks as they struggled for survival and each others' secrets. Richly researched from original sources, Secret War in Shanghai is particularly successful in painting vivid pictures of the different national groups that found themselves caught up in the city's vortex: destitute White Russians, refugees from Hitler's Germany, British taipans trying to hang onto their business interests. The story moves as fast as a racy novel, yet it is all meticulously documented fact. --John Stevenson

From Publishers Weekly
On the eve of WWII, Shanghai contained two foreign enclaves, a French Concession and an International Settlement, each ruled by a small minority of foreigners for their own economic advantage. These enclaves, which sheltered a melange of entrepreneurs and rogues, adventurers and self-promoters, are the setting for Wasserstein's account of the war years in Shanghai, a city rife with violence, vice, colonial hauteur and espionage. Wasserstein's ability to ferret out long-forgotten information from obscure archives shows on every page of this close examination of the behavior of Shanghai's foreign community under the pressure of the Japanese occupation. There are no persons or events of high importance, no battles of consequence, no intelligence breakthroughs. Paradoxically, it is exactly this absence of momentous historical drama that gives the book its charm. This is a study in microcosm of local conditions in Shanghai, where a rag-tag collection of professional survivors adapted to shifting circumstances as the war progressed, and where the intelligence services of many nations labored with equal energy and futility. Wasserstein recounts the careers of many of the more colorful and, in some instances, sinister of Shanghai's spies and opportunists. If the canvas is a bit too crowded, it should still appeal to those who find irresistible the lifestyles of the eccentric, the raffish and the villainous. (Sept.)

From Library Journal
Wasserstein, president of the Oxford Centre for Hebrew and Jewish Studies, is the author of five previous books. His new title is concerned with the espionage activities of the major powers in Shanghai during the late 1930s through the 1940s, when Shanghai was known as the intelligence capital of the Far East. Every one of the major powers operated intelligence offices there, often employing convicts or criminals as operatives in the most dubious of circumstances. It wasn't unusual for an operative to be working both sides of the fence while at the same running his own criminal enterprise to boost his profit margin. Wasserstein tells a fascinating story of wartime espionage that has had surprisingly little coverage until now. Relying on foreign intelligence documents and communications among the various agents, he weaves a tale of intrigue and suspicion that will surely interest readers. Truth is seamier than fiction.
By S. R. Schwankert
Bernard Wasserstein's look at the cloak-and-dagger side Shanghai in the 1930s and during World War II casts an even seamier light on pre-Liberation city than is usually seen.
Secret War exceeds the reader's expectations in several ways. First, the level of spying that was carried out by the various powers in the International Settlement against each other and their own citizens is nothing short of shocking. Sexual habits, personal histories, and suspected involvements were all part of the records kept by the Shanghai Municipal Police, a largely Anglo-Saxon coalition empowered to keep order in the Settlement.
Not a single nation is spared in Secret War. Just when the reader believes that Wasserstein may be favoring the British, he slams them for incompetence or outright treachery. The French, Germans, Americans, and Japanese all come under fire for treating their concessions in Shanghai as their own little fiefdoms.
Wasserstein introduces us to an eclectic cast of charlatans, murderers, and thieves. There's Eugene Pick, the Russian-born gangster who collaborates with the Japanese and, when not spending his evenings at the theater, is conspiring to have his rivals bumped off. There's "Count" du Berrier, a bogus aristocrat and genuine arms dealer available to the highest bidder. "Princess" Sumaire, another false member of a royal family, this social-climbing Indian imposter lived the high life and traded sex for influence, first among Western expatriates, and later, the Japanese.
After the outbreak of the Pacific War in the late 1930s, intelligence gathering in Shanghai turned from a broad activity aimed at foiling communism and social disruption to top-level spying. As the war deepened, two surprising details emerge: not only were citizens of the Allied nations prone to passively or actively collaborating with the Japanese, but both the Allies and the Axis powers spent as much time and resources spying on each other as they did on the enemy. Because Britain wanted to avoid dragging Japan into the larger conflict, instructions given to British citizens were never exact in stating what constituted collaboration, and therefore Shanghai continued, in some ways, to do business as usual even after the bombing of Pearl Harbor, when war was officially declared.
In between its various stories of intrigue, Secret War presents an account of expatriate life in Shanghai seldom documented elsewhere. The description of Shanghai's various newspapers and radio stations operated by the Settlement's nations and entrepreneurs is by itself short but fascinating.
Missing from this fine work of research is a single map of old Shanghai that would show the reader the lay of the land and the location of the various concessions. Without it, the reader has no idea which concessions abutted one another nor the proximity of one to the other, or the relation of the Chinese city to the International Settlement. The only other outstanding fault of the book is Wasserstein's propensity to use French and German phrases without offering a translation, even in the book's copious notations. Only those fluent in both languages will not be forced to seek the assistance of a dictionary.
Overall, Secret War in Shanghai is a great cold-weather read, a narrative that reads like a novel but with a story that is all too true.

A strugle for power by any means necessary.
By Kenneth S. Smith
If you are a scholar, serious student, or avid reader of World War II History, this book is for you. This book is exhaustively researched, meticulously crafted, and written with flowing style.
Prior to World War II, Shanghai was a major trading hub in Asia. The city was populated by Americans, British, Japanese, Italians, Nationalist and Communist Chinese, French, Australians, Indians, Germans, Jewish Refugees, Russian Refugees, and other minor national players. Add to the population rogues, spies, soldiers-of-fortune, adventurers, Chinese gangsters, con men, thieves, murders, and low lives of other callings. Mix all of these elements together and start a major world war and the intrigues begin.
This is a tale of treason, collaboration, bravery, propaganda, and maneuvering for power, prestige, and money. Businesses wanted to continue operation and ignore the consequences. Torture, murder, extortion, imprisonment, and blackmail were tools of the day. Numerous intelligence organizations competed against each other and all had to rely heavily on the Chinese for information. One fact I found interesting was the Japanese distrust of the Germans because they were racists. I find this ironic. Another interesting fact was the Allies used 100,000 Japanese soldiers in and around Shanghai at the end of the war to keep order. The book is filled with excerpts from intelligence reports, newspaper articles, and the eventual demise of some of the more colorful characters. There is also a section of fascinating pictures.
After the war, Shanghai made an attempt to recover some of her previous glory, but much of her business moved on to Hong Kong and Singapore. The final blow was the defeat of the Nationalist forces by the Communists in 1949. The city has never been the same since.

All that's Missing is Rick's
By Grey Wolffe
After the Japanese destroyed a Chinese Nationalist Army in the Battle for Shanghai in 1937, they began to take over the rest of the city. Shanghai in 1937, still had a French Concession (FC) and an International Settlement (IS, which was run by the British). The IS was just like “Casablanca” was in the eponymous movie. It was full of stateless people (White Russians and Jews mainly), spies and criminals. It was the perfect place to keep an eye on the Japanese from.

The FC was loyal to the Vichy Government, but there was a Gaullist underground that made trouble. The Germans were more Nazi than Germany, the Italians were neutral as were the Americans. The Chinese (who were only there as guests) supported the Nationalists, the Communists and the Chinese puppet government (controlled by the Japanese). The Japanese who were building the East Asian Co-Prosperity Sphere treated all other Asians like ‘little brothers’ (and we know how that works).

The Japanese slowly closed in and around the FC and IS until they slowly took them over and put most of the Europeans/Americans in internment camps. But the spy networks and underground criminal black market thrived. This is the story of the underground workings of the spy networks. Well researched and documented.

bread book comparison
By Amazon customer
I wanted a book that gave me not just recipes, but information on making bread. What makes a loaf firmer or softer? So I got a number of books from the library, and bought one book. Here is a comparison of them. I have NOT tried recipes from all of them, since at this point my main goal is information, not recipes (or 'formulas' as they like to call them).

Bread Science: The Chemistry and Craft of Making Bread, by Emily Buehler.
This is an independently published book; get it from Two Blue Books - it is more expensive used on Amazon than new direct from them. This book gives detailed coverage of bread making. There is a long chapter on the science of bread making that goes into more detail than you need, although it is interesting. You don't need to read that chapter; the rest of the book has enough information. And it is very good information on ingredients and processes. There are good diagrams on how to knead and how to shape. I found this useful and highly recommend this book.

The Bread Bible, by Rose Levy Beranbaum.
A big book with a lot of good information. This gives a lot of information on techniques, and includes useful information like expected ingredient ranges (water compared to flour). She covers equipment in depth, such as a comparison on mixing machines - and how to use each one. I am very pleased with this book, and highly recommend it. My understanding of how my actions impact the final bread have definitely improved with this and the Bread Science books. This is the book that finally turned the corner for me on how much kneading is required (more than I thought).

BakeWise: The Hows and Whys of Successful Baking with Over 200 Magnificent Recipes, by Shirley O. Corriher
This book only has a small chapter on making bread. It does give a decent overview, including the basics on shpaing, steaming, and such. But there certainly is not as much detail, and she does not emphasize flavor development the way some of the other books do. There are also no diagrams on how to knead or shape. Don't get this to be your primary book on making bread. Of course, there is a lot more in this book on other types of baking. The rest of the book chapters are called Cakes, Steam Leavened, Pies, and Cookies. There is some good information, but your cholesterol will suffer. She loves butter and cream, and makes no stab at making the recipes healthier. And I've never seen such a complicated brownie recipe before. I'm sure it's great. Just be aware what you are getting before you dive in to this book.

Local Breads: Sourdough and Whole-Grain Recipes from Europe's Best Artisan Bakers, by Daniel Leader
This book has information on ingredients, equipment, and techniques, including some diagrams, but the overview is higher level than in, say, The Bread Bible. Still, there is a lot of good information. The various sections include additional information and Q&A after some recipes. It seems to have a nice variety of recipes. Overall, this doesn't seem like a 1st choice for information but a good supplement book.

The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread, Peter Reinhart
Reinhart's books include a lot of story telling. This can be interesting, but certainly takes a lot of space. He includes his description of the required steps in the 2nd section of the book. There are some excellent pictures, such as the windowpane test. And there is a nice chart showing all the recipes and what techniques it uses, which is nice if you want to select a recipe that uses a biga, for example. He is a big advocate on slow rises and preferments, which most of these writers are. Personally, I prefer Beranbaum's book; I felt that book is better organized, has more information, and is a bit clearer. But this book is still a good choice, particularly if you prefer pictures to diagrams.

Peter Reinhart's Whole Grain Breads: New Techniques, Extraordinary Flavor, Peter Reinhart
Again, this has Reinhart's narrative style. His focus is, no surprise, whole grain breads. A lot of the basic information is repeated here, although in less detail than his Apprentice book. His recipes might initially strike you as very complicated. I made a 'spent grain bread'. It uses a soaker plus a biga, then makes the dough. However, it really was very straight forward and easy. So you might not want this as your only bread book, but it gives a lot of ideas for other breads.

With my new understanding on how to make bread, I expect I will be less dependent on pre-made recipes. That being said, having the recipes saves you from (failed) experiments and helps give new ideas. So for a good understanding, I recommend Beranbaum's "The Bread Bible" and Buehler's "Bread Science". I also might get Reinhart's "Whole Grain Breads" for a focus on those styles of bread.

This book is fantastic at going deep into what makes bread
By Ilyse
SO HELPFUL! This book is fantastic at going deep into what makes bread, bread. It explains the science while also explaining recipes and the like. It's all very cohesive and simply stated, not confusing. I'ma professional pastry cook/bread baker and I found this a very enjoyable read.

Wonderful book!
By another commenter
An embarrassing confession: For years, I made lackluster homemade bread. Sometimes it came out okay, but usually not so much. I'd try to adapt recipes that often came out poorly and I didn't understand why. Sometimes I'd bake a loaf that came out perfectly, with perfect texture and excellent flavor ... but I couldn't reproduce it, and the next time I tried the same recipe, it flopped.

After reading this book, I finally understand what's going on with my dough, and I have learned how to make a truly excellent loaf of bread! The author provides clear, well-illustrated explanations for what is happening at each step of the process, so that even a kitchen klutz like me can grasp the concepts. My breads have become consistent and much more predictable, because I finally understand what I need to do at each step and *WHY*.

Although there are a few recipes in this book, it is not a recipe book. It is a concept book which enables you to adapt your own recipes once you understand how bread works.

I strongly recommend this book to lackluster bakers like myself, and also to all homeschool moms. This sure looks like a great unit study to me!
